MINI PIES

Mini Pies for Thanksgiving are a great alternative for your friends and family who can't decide which kind of pie to have for their Thanksgiving Dessert. And they are small enough that you can eat a couple of them!

INGREDIENTS

APPLE CRUMB MINI PIE FILLING

  •  8 cups of tart apples (about 6-8) cut into small bite-sized pieces
  •  ¾ cup of flour
  •  1 ½ cups of sugar
  •  2 tablespoons of cinnamon
  •  You will also need 4 tablespoons of chilled butter cut into 24 equal portions
  •  2 boxes of pre-made pie crusts (which make about 20-22 pies)

CRUMB TOPPING FOR APPLE CRUMB MINI PIES

  •  4 tablespoons of butter (slightly softened)
  •  ½ cup of brown sugar
  •  ½ cup of flour

INSTRUCTIONS

APPLE CRUMB MINI PIES DIRECTIONS

  1. Unroll your first pie crust and cut out circles that will fit into a muffin pan.
  2. Put your circle of pie crust into your muffin pan.
  3. Mix the apples, flour, sugar, and cinnamon together in bowl.  Make sure you stir it well so everything is coated.
  4. For crumb topping, in separate bowl, combine all ingredients and mix together with fork.
  5. Fill each circle with the apple filling.
  6. Top each pie with a square of the cut butter. Then top with crumb topping.
  7. Bake in 400 oven for 18-22 mins.

PECAN MINI PIES DIRECTIONS

  1. Beat eggs in bowl.
  2. Add sugar, syrup, butter, vanilla and mix.
  3. Put roughly chopped pecans into uncooked mini pie shell.
  4. Fill pie crust with liquid to just below the top.
  5. Carefully, place in oven to cook for 18 - 22 mins. Pecans will rise to the top when cooked.
